Turkey Pesto Panini


Turkey Pesto Panini's makes a yummy after Thanksgiving sandwich, using left over turkey, combined with melty cheese, garlicky pesto and grilled to warm gooey perfection! It makes a great lunch during Thanksgiving weekend while you are putting up the Christmas decorations or after some hectic black Friday shopping! 



Turkey Pesto Panini
8 slices fresh thick bakery bread of your choice (we used everything bread)
left over turkey (or deli turkey or chicken)
1 jar of pesto (or homemade if you are really ambitious)
sliced red onion
4 slices white cheese (mozzarella, Munster)
Butter

Directions:   Lay 4 slices of bread out on work surface and spread inside of each slice with a little pesto and lay desired amount of left over turkey and thin slices of red onion on top.   Lay slice of cheese on top of turkey and onions and top with other slice of bread.  Spread second slice of bread with pesto and place pesto side down on sandwich. Butter both outsides of bread and lay on Panini press or George Forman Grill.  Close lid and grill to golden brown!  Enjoy with a fresh dill pickle and some crunchy chips for an easy deli lunch made out of left overs!


Spread each side of bread with pesto


Layer with turkey and slices of red onion
And a slice of mozzarella cheese


Top with second slice of bread and butter each slice on the outside


I don't have a Panini Sandwich press but the old George Forman works
Great for this... about the only other thing I use it for is Texas Toast :)!


Place Sandwiches on grill


Close lid and grill on med heat to a warm, golden, gooey, perfection!


Serve with a side of chips and a pickle or try my turkey and wild rice soup!

Just another fun fresh way to use up that left over turkey!
