Oven Fajitas!

Yummy!  We love Mexican food, and this is a super easy one dish recipe that when you are in the mood for Mexican you can have as quick as you can say Ole'! I usually make fajitas in a skillet but this is a super easy way to put it all in a one dish, throw it in the oven and 1/2 hour later dinner is done!



Oven Fajitas  (12 servings)
4 chicken breast cut into thin strips
1 green pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced
2 med onions, sliced
2 TBS. Olive Oil
3 cloves of minced garlic
1 tsp. garlic powder
2 tsp. chili powder
2 tsp. cumin
2 tsp. cilantro flakes (optional
1/2 tsp. paprika
1/4 tsp. Cayenne pepper
1/2 tsp. salt
1/2 tsp. pepper

Serve with:
Corn or flour tortillas
Shredded cheddar cheese
Sour Cream
Salsa

Cooks Notes:  You could easily cut this recipe in half for a smaller family.

Directions:  Pre-heat oven to 375 degrees.  Spray large glass baking dish with non stick cooking spray.  Cut up chicken and veggies and place in dish. Drizzle with olive oil and sprinkle with spices.  Toss well with tongs to coat.  Bake for about 30 minutes until chicken is done and juices run clear.  Serve with tortillas and toppings.


Toss the oil and spices with the chicken and veggies in a sprayed 
11" x 15" baking dish 


Bake for 30 minutes until chicken is cooked and veggies are 
roasted to a tender crisp


Serve on flour or corn tortillas with yummy toppings liked salsa, 
shredded cheese and reduced fat sour cream!

This was a super easy, delicious and healthy dinner that my entire family enjoyed! We served it with some Mexican rice on the side for a complete meal in minutes! We even had plenty of left overs to pack for lunches the next day!
