Quinoa Bean and Spinach Salad




Loaded with fiber and protein, this healthy salad makes a delicious lunch on its own, or a side dish at any meal!  It is 89.5 calories per 1/2 cup serving and only 2 p+ on the ww plan...  

Quinoa Bean and Spinach Salad (makes about 8 1 cup servings or 16 1/2 cup servings)
1 cup cooked and cooled quinoa
2 cans white navy beans
1/2 bag of spinach leaves chopped
1/4 cup of shredded carrots
1 yellow or red pepper diced
1/2 English cucumber diced
1/2 red onion diced
1 tsp Greek seasoning
2 Tbs. olive oil

Directions:  Cook 1 cup of Quinoa and let cool to room temperature.  Rinse and drain 2 cans of white navy beans.  Coarsley chop spinach and other veggies. Combine beans, veggies, and cooled quinoa in a large bowl.  Drizzle with 2 Tbs. olive oil and sprinkle with 1 tsp. of Greek seasoning and toss to coat.

Cooks Notes:  I sometimes add reduced fat feta cheese, and cherry tomatoes to this salad but I did not have any in my fridge. Just be creative and add all the veggies you have on hand!

Measure your quinoa


Cook per package directions with water


I added a tsp. of Italian seasoning while cooking my quinoa
 for a little extra flavor for the salad


Drain beans


Rinse beans in colander


Add cut up veggies and beans together in bowl


I like baby spinach in it


Chop spinach into small pieces


Add Greek seasoning


After quinoa is cooked let it cool


Drizzle with olive oil


Once quinoa is cooled add it to salad and toss to coat everything well
