This is super simple and always a big hit at every party we serve it at, or take it to. It looks and taste fresh and the colors are pretty and vibrant with the red, green and white. It is delicious simply served spooned over a sliced french baguette...
2 bunches of green onions washed and chopped
1 Tbs. fresh parsley chopped fine (or dried parsley flakes)
4 Roma Tomatoes, diced and seeded
Feta Cheese (crumbled) - I use low fat or fat free
Greek Seasoning Blend
1 loaf sliced french baguette
Directions: Wash and chop the green onions and put in large flat dish with sides (you could use a 9 x 13 inch glass dish if you did not have anything else). Dice and Seed Roma Tomatoes and put in dish with onions. Scatter crumbled feta cheese over onions and tomatoes. Sprinkle chopped parsley on top. Sprinkle with Greek Seasoning Blend (I don't measure but I am generous with it.) Drizzle with olive oil. Serve with sliced french baguette.

To serve, spoon Greek "Salsa" on sliced french baguette
