Potato Crusted Chicken (Hungry Jack Chicken)


This is an old recipe that was given to my Mom by someone at her church when I was young.  It is a recipe that they served at a women's luncheon, and I know she has made it for party's and showers. It is a great way to make a yummy coated chicken for a crowd but is super simple to make for dinner too. The magic ingredient is the coating that is made with Hungry Jack instant potatoes!  I had not had it in years, but she made some for us this weekend and it was so yummy, I thought I would share her recipe with you!

Potato Crusted Chicken (Hungry Jack Chicken)
4 large chicken breasts cut in half 
2 Tbs. milk
1 egg
1 cup Hungry Jack Potato Flakes
1 tsp. garlic powder
1/4 cup Parmesan cheese
1 tsp. salt
1/4 tsp. pepper
1 tsp. parsley flakes
1 stick butter

Directions:  Beat eggs and milk together.  In separate bowl, mix potatoes flakes, garlic powder, Parmesan cheese salt, pepper, and parsley flakes together.  Dip the chicken pieces into the egg milk mixture to wet, and then coat with potato flake mixture.  Melt butter in baking dish, lay coated chicken pieces in the melted butter in dish and turn to coat both sides with melted butter.  Pat some extra flakes if needed on top. Bake at 350 degrees for 40 to 45 minutes until golden brown.



She served this tasty, tender, chicken breasts with some buttery noodles, and mixed veggies and it was delicious!  We feel so blessed that my Mom who is 85, still enjoy's cooking for her family.  She is a great cook, and we never leave her house hungry!  Thanks Mom!
