Fruit Salad With Secret Vanilla Sauce!

This is a tasty fruit salad that would make a delicious extra addition to any picnic or buffet. We served it the other day at Jessy's birthday lunch and the bowl was just about empty, so I would say it was a big hit!  It was a last minute side that I decided to make because I had a lot of fresh fruit on hand.  I remembered seeing this recipe on-line and it had reminded me of one that my Mom used to make.  I am glad I gave it a try, I am sure with the picnic months sneaking up on us I will be making this fresh fruit salad many times this summer!  The secret ingredient is instant vanilla pudding that mixes with the juices in the fruit and makes a delicious glaze for the salad!

Fruit Salad With Secret Ingredient Vanilla Sauce!
29 oz. can peach slices, undrained (I used fresh)
20 oz can pineapple, chunks, undrained (I did not have)
3 1/8 oz. box dry vanilla instant pudding mix (secret ingredient!)
1 lb strawberries, stemmed and quartered
1 banana, sliced (I used a few)
1/2 pt blueberries or blackberries
1 bunch of grapes (I used green)
1 Tbs. sugar, (optional)
Fruit Fresh (optional)
Any other fruit you choose: I used cantaloupe, clementines, pears

Directions: In a large bowl, combine peaches, pineapple, and vanilla pudding mix, including the juices from the cans, and mix well until pudding is dissolved.  Stir in other fruit and sugar if desired.  Chill until ready to serve.

Cooks Notes - If you have followed this blog at all or read any of my recipes, you would know that I am not a rule follower when I am cooking, I usually improvise with things I don't have on hand and that is exactly what I did with this recipe! I only used fresh fruit, I did not have canned fruit when I tried this recipe but I figured that the natural sugars in the juices would be enough to thicken the vanilla pudding to make a nice sweet sauce/glaze over the salad.  It worked fine but I let the fruit sit for a bit for the juices to collect before adding the pudding.  I just sprinkled the pudding over the fruit and stirred it in.  It turned out fine, my niece loved it!  But it you want a more wet glaze I would suggest using the canned fruit with juices.  I remember back in the day my Mom had a recipe where she used the juice from a can of pineapple with the cooked kind of vanilla pudding to make a glaze for the fruit salad, but this was so much quicker and easier!  I also sprinkled a little fruit fresh over my bananas to keep them from turning brown.


Cut and place fruit in large bowl


Sprinkle small box of vanilla pudding over fruit 


Stir well to combine


Pour into serving bowl if desired and chill until serving!

A fresh bowl of fruit really reminds me of spring, and with Easter just around the corner, I think this would make a delicious dish to serve at your Easter brunch or, or dinner!
