Pesto Chicken Bake


Happy Monday! Well, with a new week upon us, I thought I would post this super easy recipe to kick start your week! This recipe definitely gets a 2 thumbs up!  It was not only tasty and delicious, it is a no fuss, quick and simple dish for a busy week night.  It has very little prep and just a few simple ingredients so you can have it in the oven in just minutes!

Pesto Chicken
4 chicken breasts (cut into chunks)
salt and pepper
1/2 cup basil pesto 
1/2 cup shredded low-fat mozzarella cheese

Linguine noodles (or pasta, potatoes, or rice of your choice to serve with)


Directions:  Preheat oven to 375 degrees.  Spray a 9" x 13" baking dish with non-stick spray. Spread 1/4 cup basil pesto to lightly cover the bottom of the dish. Spread the chicken over the pesto, then spread the remaining pesto over the chicken.  Cover the dish with aluminum foil and bake the chicken for 25-30 minutes, until the chicken is almost done.  Remove the foil and sprinkle the cheese on top of the chicken. Put dish back into the oven, uncovered, and cook 5 minutes more until the cheese is melted. To lightly brown the cheese, you can broil the dish for another 2-3 minutes more.

Cooks Notes - This dish is great served with Pasta, we choose linguine noodles, the pesto is great spooned over it!



I like this recipe because  it only has a few simple ingredients!


 Measure 1/2 cup of basil pesto


 Spread in bottom of pan


Cut up 4 chicken breast into pieces


 Pour the other 1/4 cup of pesto on top of chicken, cover with foil
and bake at 375 degrees for about 20 to 25 minutes


Take out of oven when chicken is almost done, remove foil and sprinkle with mozzarella cheese, cook 5 minutes longer until cheese is melted 


Move pan to broiler for 2-3 minutes to brown cheese a bit


Serve with linguine noodles or other pasta of your choice
