Spinach Artichoke Dip Pasta (with Chicken)


If you like spinach artichoke dip then you will love this casserole.  It combines the taste of the classic dip with chicken and noodles to make a complete meal that everyone will love and it will be destined to become a family favorite!

Spinach Artichoke Dip Pasta
1 lb. box Pasta ( I used penne)
2 large chicken breasts (or 3 smaller)  cooked and diced
1/2 package bacon fried and crumbled
2 TBS. olive oil
3 cloves minced garlic
1 large onion diced
3 Tbs. all purpose flour
1/2 cup chicken broth
2 cups milk
1 10 oz. pkg. frozen chopped spinach thawed and drained
1 14 oz. can of artichoke hearts chopped
Few grates of fresh nutmeg
Salt and pepper to taste
1 1/2 cups shredded mozzarella cheese divided
1 1/2 cups Parmesan divided

Directions:  Pre-heat broiler and spray a 9 x 13 glass baking dish with non-stick cooking spray.  Cook and dice chicken (I cooked mine in the crock pot earlier in the day).  Cook and drain pasta.  In a skillet on medium heat and cook bacon pieces until crisp, drain on paper towel.  Heat olive oil over medium/low heat and add onion and garlic until onion is softened.  Whisk in flour for 1 to 2 minutes until lightly browned about 1 to 2 minutes, gradually whisk in chicken broth and cook stirring constantly until incorporated for another 1 to 2 minutes.  Stir in milk and bring to a simmer.  Add spinach and artichoke hearts and cook until veggies are heated through, about 2 to 3 minutes.  Season with salt, pepper and nutmeg.  Stir in 1 cup mozzarella and 1 cup Parmesan cheese until melted and smooth.  Add chicken, cooked pasta, and bacon and stir to combine.  Spread into sprayed baking dish and sprinkle remaining cheese on top.  Place under pre-heated broiler for 3 to 4 minutes until cheese is brown and bubbly on top.  Serve immediately.



Pre cook and dice chicken (I did mine in the crock pot earlier in the day)


Drain and chop artichokes


Thaw and drain frozen chopped spinach


Cook and drain pasta


Cook bacon pieces until brown and crisp


Add olive oil to pan and saute' onions and garlic until onions are soft


Stir in flour and cook for a few minutes


Add chicken broth and stir to incorporate


Cook and stir mixture for a few


Add milk and  bring to a simmer


Add artichokes and spinach


Add nutmeg (I did not have fresh so I used ground) 
and salt and pepper to taste


Add mozzarella cheese


and Parmesan cheese, stir until melted


Add diced cook chicken and cooked pasta


Pour into prepared baking dish and add remaining cheese on top

Place in oven under broiler until cheese on top is brown and bubbly

Serve immediately and sit back and wait for the applause!
