Peanut Blossoms

This is one of my son John's favorite Christmas cookies.  In fact I usually hide them from him and his friends so that they don't get all eaten before Christmas!  They call me the cookie Natzi, but if I don't there won't be any cookies left to leave out for Santa on Christmas Eve!

Peanut Blossoms
48 Hershey Kisses (unwrapped)
1 1/2 cups flour
1/3 cups sugar
1/3 cups brown sugar (firmly packed)
1 tsp. baking soda
1/2 tsp salt
1/2 cup shortening (I used butter)
3/4 cup creamy peanut butter
2 TBS. milk
1 tsp. vanilla
1 egg
Extra sugar for rolling balls

Directions: Pre-heat oven to 375 degrees.  Blend with electric mixer, flour, sugars, baking soda, salt, shortening, peanut butter, milk, vanilla and egg until well blended and stiff dough forms.  Roll into 1 inch balls and roll in sugar. Place 2 inches apart on ungreased cookie sheet.  Bake in 375 degree oven for 10 to 12 minutes until golden brown.  Remove from oven and firmly press and un-wrapped Hershey Kiss into the center of each cookie until edges crack slightly. Remove from cookie sheet and cool on cooling rack!  Wait until chocolate kiss sets up slightly before storing and stacking because the chocolate is gooey!

Prepare dough, and get a bowl of sugar and un-wrapped chocolates ready

Roll into 1" balls and roll the balls in sugar

Place on cookie sheet

Bake in 375 degree oven for 10 to 12 minutes and
place un-wrapped Hershey Kisses in center of each cookie
immediately after removing from oven

Hide from son so they don't disappear before Christmas!
