Turkey and Stuffing Casserole is a great recipe to make and freeze so you can enjoy a one dish Thanksgiving dinner on a busy night during the Christmas season! I make this just about every year after Thanksgiving but this year I did not have enough stuffing left over! This could also be made using chicken and stove top stuffing for a quick and tasty weeknight dinner!
Turkey and Stuffing Casserole
2 cups left over turkey diced
1/2 cup diced onions
2 cups left over stuffing
1 can cream of chicken soup (or use up left over gravy if you have some)
1/2 can milk
1 cup shredded cheddar cheese
1 bag of mixed vegetables (about 2 cups)
Directions: Spray 9" x 13" pan with non stick cooking spray. In large bowl combine 2 cups diced turkey, diced onions, and bag of mixed veggies. Mix in 1 can cream of chicken soup mixed with 1/2 can of milk (or substitute a little left over gravy). Spread into the sprayed casserole dish and sprinkle with shredded cheese. Spoon left over stuffing (or a box of stove top if you don't have any left over!) on top of cheese and press lightly to make the topping. Wrap and freeze for later, or bake in a 350 degree oven for about an hour covered with foil until hot and bubbly. Take foil off the last few minutes to crisp up top of stuffing.
