Turkey Pot Pie

What did the turkey say before it was roasted...
Boy I am stuffed!

I bought a 21 lb. bird this year for Thanksgiving and even after sending a leftover dinner home with everyone we still had a lot of turkey left!  Turkey Pot Pie is another great way to use up those turkey leftovers.  This recipe can also be wrapped and frozen to enjoy later!

Turkey Pot Pie
2 cups diced left over turkey meat
1/3 cup diced onions
Chopped parsley or parsley flakes (op
2 TBS. Butter
1 can cream of chicken soup
1/2 cup milk
1/2 tsp. salt
1/4 tsp. pepper
2 cups frozen mixed vegetables or frozen peas and carrots mix
crust for 2 crust pie (store bought or homemade)

Directions:  Pre-heat oven to 350 degrees and prepare crust for 2 crust pie and place in glass pie plate. In pan on stove top melt butter and saute' onions and parsley until soft. In separate bowl add diced turkey (or chicken) and frozen vegetables.  Stir together soup and milk and add to chicken and vegetables.  Add sauteed onions and parsley, salt and pepper and stir well. Pour into prepared pie crust and top with second crust. Pinch edges together and vent top.  I used a cute leaf cookie cutter to vent my crust. Bake in 350 degree oven for 45 min. to 1 hour until bubbly and brown.  I usually cover my edges with foil for the first 1/2 of baking to prevent over browning then remove foil the last 15 minutes or so. Take pie out of the oven and let stand at least 5 minutes before serving. Great served with a green leafy salad!  I wrapped my pie really well and put it in the freezer for a busy weeknight dinner!

Cut up 2 cups of turkey breast

Saute' onions and parsley in 2 TBS. butter

Add frozen vegetables, turkey, and sauteed onions and parsley and mix

Whisk together cream of chicken soup and milk and pour into
vegetable and meat mixture and stir well, season with salt and pepper

Pour into a prepared crusts

Cover with top crust and pinch edges together.  
Cut slits in top of pie to vent or use decorative cookie cutter

I don't have a finished picture of my pot pie because I wrapped it up tight and put it in the freezer to pull out in a few weeks.  After a long hard day of Christmas shopping this warm turkey pot pie will be a real treat for dinner!
