Meatballs
2 lb. ground beef
1 large onion diced
1 clove garlic minced
1/3 cup Parmesan cheese
1 cup dried bread crumbs (I used Italian style)
4 eggs
1/4 cup chopped parsley
1 tsp. salt
1 tsp. Italian Seasoning (optional) (I left out)
1 tsp. salt
1/2 tsp. pepper
Directions: Preheat oven to 350 degrees and cover 2 large cookie sheets/jellyroll pans with aluminum foil and spray with non-stick cooking spray. Mix all ingredients together using hands to incorporate well. Scoop meat mixture out and roll in balls and lay on baking sheets. Bake in 350 degree oven for about 30 minutes.
Cooks Notes - I will use 1/2 for Swedish meatballs and noodles I will be making tomorrow, and would normally freeze the other 32 after baking and cooling in a Ziploc freezer bag to use in spaghetti and meatballs another night but I was in a hurry and decided to just put it in a sprayed loaf pan and bake as a meatloaf for dinner another night with some baked potatoes! You can do so many fun things with them and this recipe makes a lot... If you are having a big party use the entire batch with some fun sauce for appetizers!
