This is the chicken dish that we served on Valentines Day at our "sweetheart dinner." Everyone seemed to like it and wanted the recipe. We served it with some Amish buttered egg noodles on the side which worked out well since there is a delicious sauce/gravy that you pour over the chicken so you can ladle some over your noodles too! Pinterest has several versions of this recipe, here is how I made mine...
3 to 4 boneless, skinless chicken breasts, trimmed and cut in half lengthwise
Salt and Pepper
1/3 cup flour
3 Tbs. vegetable oil
2 Tbs. butter
1 container (8 oz) sliced fresh mushrooms
1/2 cup cream sherry wine
1 can (18 oz) Progresso creamy mushroom soup
6 slices Muenster cheese
3 tablespoons chopped fresh parsley
Directions: Heat oven to 350°F. Sprinkle both sides of the chicken with salt and pepper. Spoon flour onto shallow dish or pie plate. Coat both sides of chicken with flour and shake off excess. In a skillet, heat oil over medium heat. Brown chicken on both sides. (You don’t need to cook the chicken completely because it will finish cooking in the oven.) Transfer chicken to 13x9-inch glass baking dish. Place butter in same skillet and let melt over medium-high heat. Add mushrooms, sprinkle with salt and pepper. Cook and stir mushrooms until golden brown. Stir in sherry, cook and stir for additional 2 minutes. Stir in the soup and mix well. Cook until thoroughly heated. Pour mushroom sauce over chicken then top each piece of chicken with one slice of Munster cheese. Cover dish with foil and bake 30 minutes. Remove from the oven, set aside to cool slightly. Top with parsley.
Gather ingredients
Cut chicken breasts in half lengthwise and pound so they are an even thickness
Season with salt and pepper and dip in flour
Brown the chicken in oil in skillet on medium heat until golden brown
but not cooked through (they will finish cooking in oven).
Place in sprayed 9 x 13 inch baking dish
Melt butter in pan
Cook mushrooms until lightly browned
Add Cream Sherry and cook for a few minutes
Add cream of mushroom soup
Stir in soup and mix well
Spoon mushroom sauce over browned chicken in pan
Place slices of Munster cheese on top of chicken and sauce and cover will foil, bake at 350 degrees for 30 minutes until chicken is cooked and tender
Sprinkle with fresh chopped parsley and serve with rice, noodles, or potatoes!
