What is not to love, we are talking about... CHOCOLATE HOT FUDGE PUDDING CAKE! If you need a last minute dessert to take to a pot luck and don't know what to make, or just need a massive chocolate fix, or are extremely PMSing this is a great choice because you probably have all the ingredients in your pantry! Mix it, bake it, and serve it alongside some vanilla frozen yogurt and you have a dessert everyone will love and in no time at all!
Chocolate Fudge Pudding Cake (double recipe for 9 x 13 pan)
2 cups flour
4 tsp. baking powder
1 tsp. salt (recipe calls for 2 but that seemed like too much salt for me!)
1 1/3 cup granulated sugar
12 TBS. cocoa powder (4 + 8)
1 cup milk
4 TBS. melted butter
2 tsp. vanilla
1 cup chopped nuts (optional, I leave out and serve them on the side)
2 cups brown sugar
3 cups boiling water
Directions: Mix together flour, baking powder, salt, granulated sugar, and 4 TBS. cocoa in medium bowl. Add milk, butter, vanilla and stir until smooth. Add nuts (optional) and stir into batter. Spread batter in a sprayed 9 x 13 inch baking pan. Mix brown sugar and remaining 8 TBS. cocoa together and sprinkle on top of batter in baking dish. Pour 3 cups of boiling water over the top of everything in pan. This pudding when baked has a chocolate sauce on the bottom and cake on the top. Bake in a 350 degree oven for 40 minutes. Serve warm or cold with vanilla ice cream or frozen yogurt! YUMMY!

Add butter, milk and vanilla
Spread into sprayed 9 x 13" pan (sorry this is a terrible picture)
In separate bowl mix brown sugar and the remaining 8 Tbs. cocoa
Sprinkle this mixture on top of batter in baking dish
Measure 3 cups of boiling water
Pour over top of everything (I know this sounds weird)
Bake cake in 350 degree oven for 40 minutes
This will turn out awesome with chocolate cake on top
and a warm gooey chocolate sauce on the bottom
Scoop out and serve warm with some vanilla ice cream or frozen yogurt!
