Looking for a quick refreshing salad? Look no further, this deliciously quick Greek Cucumber Salad is a perfect choice. I sometimes just like to create things from things I have on hand in my fridge or pantry and this creation I will definitely be making again... sometimes it pays to clean out the fridge, you might be surprised with what you can come up with!
Greek Cucumber Salad
2 large English cucumbers
1/2 large sweet onion
6 Capri tomatoes quartered (or cherry tomatoes)
salt and pepper
1/2 cup fat free feta cheese
1/2 cup Greek yogurt tzatziki sauce (homemade or store bought)
dried parsley flakes or fresh parsley chopped fine
Directions: Peel and slice cucumbers in to a medium size bowl. Dice sweet onion and add to the cucumbers along with the tomatoes. Sprinkle with a little salt and pepper. Add 1/2 cup fat free feta cheese, and 1/2 cup Greek yogurt tzatziki sauce and toss gently to coat. Sprinkle with parsley flakes, or fresh parsley.
Peel and slice cucumbers and dice onions
Place cucumber slices in bowl
Add diced onion
Add tomatoes and season with salt and coarse pepper
Add 1/2 cup of fat free crumbled feta cheese
Stir in 1/2 cup Tzatziki Greek yogurt dip or homemade tzatziki sauce
Toss to coat and sprinkle with parsley
