This was one of those times that I needed a quick dessert for dinner for last minute guests, but did not feel like going to the store to get ingredients, so I simply looked in my pantry to see what I had on hand. What I found was a lemon cake mix. Usually I make a lemon cake that my family loves that has a sweet drizzle over the top, but unfortunately I did not have everything to make it, so I looked up recipes to see what else I could do with my cake mix and this is what I found. It turned out pretty tasty. The cream cheese frosting was delicious, but the condensed milk and lemon juice did not seem to soak in the cake very well but it did give it another layer of tangy sweetness. I think you could even skip the milk layer and just make the lemon cake with the lemon cream cheese frosting and it would be just as delicious and save a few calories too!
Lemon Poke Cake
1 lemon cake mix (make according to pkg. directions)
Topping
1 can sweetend condensed milk
1/4 cup lemon juice
Frosting
1 8 oz. pkg cream cheese (softened)
3 cups confectioners sugar
2 Tbs. lemon juice
Directions: Make cake according to package directions. While cake is baking mix the can of condensed milk with 1/4 cup lemon juice. When the cake is done, poke holes in top of cake and drizzle the milk/lemon mixture over the cake (all of the milk will not soak in). Let cake cool. Mix the frosting ingredients together until smooth and creamy and frost the top of cake. Enjoy
Mix a lemon cake mix according to directions on the package
pour into a prepared 9 x 13 inch pan
Bake as directed... while cake is baking, mix up milk/lemon mixture
Take the cake out of the oven
And poke holes in top of cake while it is still warm
Pour condensed milk/lemon mixture over the cake with holes
and let is soak in.All of it will not soak into the cake
While cake is cooling, make frosting, by mixing ingredients
until light and fluffy
Spread frosting over cake
Cut into squares
Enjoy
