Happy hump day everyone! It has been a busy week and it feels good to be heading down the home stretch heading for the weekend! I am feeling extremely motivated and have been going through tons of stuff this week trying to get ready for a garage sale I am having with a friend later this month. Between sorting through junk, subbing a few days at the elementary school I worked at last year, and taking my Dad to the doctor I have not had much time to cook or blog, but I thought I would quickly post this recipe for my family's favorite cheese ball. I make it almost every holiday because it is super simple, but supper tasty too! This is the one I made for Easter and shaped like a carrot, but usually I just make it into a regular ball (although at Thanksgiving I made it into a turkey shape! Next time you are having a get together and need a quick appetizer, give this one a try!
1 1/2 packages of cream cheese, softened
3 oz. deli ham cut into bite size pieces
6 green onions diced
1 tsp. dried dill weed
1 cup shredded cheddar cheese, divided
Parsley (if making a carrot shaped cheese ball for carrot top)
Directions: Place softened cream cheese in medium size bowl and set aside. Chop ham, and onions and mix with cream cheese. Add the dill, and 1/2 cup shredded cheddar cheese and mix well. Roll into ball, or desired shape using some plastic wrap to help because it can be sticky. Place on dish and press remaining 1/2 cup shredded cheese on to the outside of the cheese ball. Wrap in plastic wrap and refrigerate until ready to serve. Serve with assorted crackers.
Chop ham into bite size pieces
Place soft cream cheese into a bowl and mix in onions, ham, and dill
Add 1/2 cup shredded cheese
Stir to thoroughly combine ingredients
Now is a great time for a sample taste before you shape it up to serve!
Form desired shape using plastic wrap
Press remaining 1/2 cup of shredded cheese onto outside of cheese ball
If making a carrot shape like I did, add washed parsley for the top
Serve with assorted crackers and fruit if desired
