Village Salad

This is one of my all time favorite salads, with bacon, almonds and cheese, what's not to like! And check out my new salad bowl I found on the clearance rack at Home Goods, I just love it and had to make something pretty to put inside!  It is a simple salad to make, but the dressing really makes it special!  This salad is a great choice to take to a pot luck or picnic... everyone will want the recipe! I decided to make this for Easter dinner this year. It is similar to a salad I really like at Max and Erma's and thought everyone would enjoy it for a change! Village Salad
Romaine lettuce
Red onion sliced thin
Roma tomatoes sliced thin
Sliced almonds 
Cheese (blue cheese, or a white cheese like shredded mozzarella)
Crumbled bacon
Croutons (optional)

Village Salad Dressing
1/3 cup white vinegar
3/4 cup sugar
2 tsp. prepared mustard (I used dijon)
1/4 of a small white onion minced (or 1/4 tsp. of dried minced onion)
dash of salt & pepper
1 cup oil
1 tsp. poppy seeds

Directions:  Mix dressing ingredients and set aside.  Wash, dry, and chop desired amount of Romaine lettuce depending on how many people you want to serve. Place chopped Romaine in a salad bowl along with thinly sliced red onion.  Layer with thin slices of Roma tomatoes, sprinkle with sliced almonds, cheese, and crumbled bacon and garnish with croutons.

Wash spin and chop desired amount of fresh Romaine lettuce and place in bowl

Add onions, cheese, onions, almonds, crumbled bacon, and tomatoes 
and garnish with croutons

To make dressing mince onion in food processor

Process until finely chopped

Add vinegar

Add mustard

Add oil

Add sugar

Add poppy seeds

Blend until well incorporated

Place in jar and keep refrigerated

Serve on the side with Village Salad

Next time you get asked to bring a salad to a pot luck dinner, give this one a try... everyone will love it!  You can serve the dressing on the side, or toss it over the salad to make easy serving!
