Creamy Tortelini Soup

Snow Day Soup!

YAY!  Everyone loves a snow day and we sure got one today in White Lake!  It snowed from morning til late night yesterday and we got a lot of the white fluffy stuff dumped on us.  I don't really mind, especially if I don't have to go anywhere in it.  It is a great time to cozy up in front of a fire an read a good book.  I had all the ingredients to make this super easy and creamy chicken tortellini soup and thought it was a perfect opportunity to make it since John and I were planning on staying home all day!  It was a warm delicious meal with little effort on my part. The original recipe that I found, called for heavy cream but who needs all that extra fat!  I find I can substitute fat free half and half in recipes like this and it works just fine.  I served it up with a loaf of warm crusty bread and John gave it a 2 thumbs up so I will be making it again!

Slow Cooker Recipe for Creamy Chicken Tortellini Soup

1 medium yellow onion, diced
1/3 cup all purpose flour
1 Tbs. dried basil
2 cloves of minced garlic
2 Tbs. tomato paste
3 Tbsp olive oil
4 cups chicken broth
2 (14.5 oz) cans petite diced tomatoes
1 to 1 1/2 lbs boneless skinless chicken (I used 3 small breasts)
1 tsp salt
1/2 tsp pepper
1 bag frozen cheese tortellini
3 cups packed fresh baby spinach 
1/2 cup Parmesan cheese
1 cup fat free half and half

In a microwave-safe bowl add the onions, flour, basil, garlic, tomato paste and olive oil.  Microwave for 5 minutes, stirring occasionally.  Add the mixture to the slow cooker.  Add broth, tomatoes, chicken, salt and pepper to the slow cooker and stir. Cover and cook on LOW for 4-6 hours or on HIGH for 3-4 hours or until chicken is tender.   Remove the chicken, and on a cutting board, cut the chicken into bite-size pieces. Add the chicken back into the slow cooker.and add in tortellini and spinach, Parmesan cheese. Warm the half and half slightly so as not to cause curdling (I added some of the warm soup mixture from the pot to the cream to warm), then add to the pot.  Put the lid back on and cook on HIGH for about 10 more minutes, or until the tortellini are cooked through. Ladle into serving bowls and enjoy!

Add first 6 ingredients to a microwaveable bowl

Place in microwave and cook for about 5 minutes stirring occasionally, 
this will soften the onions and create a paste to thicken the soup!

To your crock pot add your pasty concoction you just microwaved 
along with your petite diced tomatoes, chicken broth, salt and pepper.

Add your raw chicken to mixture an cover and cook on high 3 to 4 hours,
or low for 4 to 6 hours, until chicken is tender.  When cooked, 
remove chicken and cut into pieces and return to crock pot.

Add 1 bag of frozen cheese tortellini and stir

Also add your spinach and warmed half and half to the pot
and stir.  The spinach looks like a lot but it will wilt down.  
Cover and cook an additional 10 minutes until tortellini is cooked!  

A bowl of warm tasty soup is perfect on a cold snowy day!  This recipe makes 8 servings and since there is just the two of us at home now we will have plenty of leftovers for a few days!  If you have a favorite crock pot soup recipe I would love for you to share it with me so we can give it a try!
